Lemon Chicken Orzo Soup

Yields: 4-6 servings

Ingredients:

2 carrots

2 celery stalks

3 tablespoons of butter

2 cups of shredded, cooked chicken

1/3 cup of fresh lemon juice

2 teaspoons lemon pepper seasoning

6 cups of broth

1 cup orzo pasta

1 tablespoon garlic powder

1 tablespoon onion powder

1 tablespoon dried thyme

1 tablespoon sugar

1 cup heavy cream

Salt, to taste

Pepper, to taste

Cucumber sandwiches, for serving

Begin by dicing the carrots and celery. In a pot, sauté them in the butter until softened.

In a separate bowl, combine the cooked chicken with lemon juice and lemon pepper, then set it aside.

Once the carrots and celery are tender, pour in the broth and add the orzo. Then incorporate the garlic powder, onion powder, thyme, and sugar. Allow to simmer for 10 minutes. After that, stir in the chicken mixture and cream; continue to simmer for another 5 minutes.

Season with salt and pepper according to your taste preference. Serve alongside cucumber sandwiches.
