White Chocolate and Pumpkin Pie Spice Popcorn Bites

Servings: 12

Ingredients:

  • 12 cups of unsalted, unbuttered popped popcorn
  • 3 cups of chopped white chocolate or white chocolate chips
  • 1 tablespoon of light olive oil
  • 2 teaspoons of pumpkin pie spice
  • 1/2 cup of toffee bits
  • 1 teaspoon of flaked sea salt, crushed

Start by lining a large, rimmed baking sheet with parchment or wax paper. Place the popcorn in a large mixing bowl.

In a microwave-safe bowl, combine the white chocolate, olive oil, and pumpkin pie spice. Heat in the microwave on medium power for about 2-3 minutes, stirring every minute until the mixture is fully melted and smooth.

Drizzle the melted chocolate mixture over the popcorn. Add the toffee bits and toss everything together until evenly coated. Spread the mixture onto the prepared baking sheet, ensuring it reaches the edges of the pan, and then sprinkle the crushed sea salt over the top.

Allow the popcorn bites to cool, then refrigerate for 1-2 hours until they are set. Once ready, break them into chunks for serving.

Tip: You can create your own pumpkin pie spice at home by combining three parts ground cinnamon with one part each of ground nutmeg, allspice, and ginger.
