Roasted Pumpkin Seeds
Water
1 1/2 cups raw pumpkin seeds
2 teaspoons sea salt, plus more for extra flavor (optional)
2 teaspoons melted salted butter
1 teaspoon garlic powder
1 teaspoon paprika
In a pot, bring water to a boil over high heat. Add the pumpkin seeds and 2 teaspoons of salt; let them boil for 15 minutes. Drain the water and lay the seeds flat on paper towels to dry.
Preheat your oven to 350°F. Prepare a baking sheet by lining it with foil or parchment paper.
In a medium-sized bowl, combine the seeds and melted butter, ensuring they are well-coated. Add garlic powder, paprika, and any additional salt to taste. Evenly distribute the seeds on the prepared baking sheet.
Roast in the oven for 25-30 minutes, or until they turn golden brown and are lightly toasted, stirring every 10 minutes to ensure even cooking.
