Feta and Mint Watermelon Salad

1/4 cup lemon vinaigrette

4 cups diced watermelon

1/2 English cucumber, sliced into 1/4-inch half moons

1/2 small red onion, thinly sliced

1/4 cup crumbled feta cheese

2 tablespoons fresh mint, coarsely chopped

Start by drizzling the vinaigrette into the bottom of a large canning jar. Next, layer the ingredients in the following order: watermelon, cucumber, red onion, feta, and mint.

Seal the jar tightly with the lid and give it a gentle shake to mix all the ingredients. Refrigerate until it’s time to serve.

Note: Substitute Greek dressing for the lemon vinaigrette if desired.

Watermelon Fruit Pops

Recipe provided by the National Watermelon Promotion Board

1 watermelon

Chunks of fresh fruit (like grapes, strawberries, or kiwi)

Puree the watermelon and pour it into ice pop molds.

Add chunks of your chosen fresh fruit, insert the caps, and freeze.

Enjoy once fully frozen.
