Game Day Taco Dip
Preparation time: 25 minutes
Cooking time: 5 minutes
Yields: 12 servings
1 pound ground beef
1 package (1 ounce) taco seasoning
1/4 cup water
2 tablespoons chopped cilantro
1 can (16 ounces) zesty salsa-flavored refried beans
1 jar (16 ounces) thick and chunky salsa, either medium or hot
2 cups guacamole
1/2 cup sour cream
3 packages (5 ounces each) Fresh Express Butter Supreme lettuce blend
1 1/2 cups shredded sharp cheddar cheese
1 cup diced tomatoes
1 can (2 1/4 ounces) sliced black olives, drained
1 package (14 ounces) tortilla chips
In a skillet over medium-high heat, brown the ground beef for about 5 minutes or until it’s no longer pink. Mix in the taco seasoning, adding water; let it cook for 2 more minutes until the water evaporates. Move the mixture to a bowl and allow it to cool to room temperature before mixing in the cilantro.
In a 9-inch pie plate, layer the refried beans evenly, followed by the seasoned beef and then the salsa. Dollop portions of guacamole on top of the salsa and gently spread it to an even layer.
Scoop the sour cream into a small resealable bag and snip off a corner. Use it to pipe a football shape onto the guacamole.
Place the pie plate on a large 15-by-18-inch serving tray and arrange the salad blend around it. Finish by adding the cheddar cheese, tomatoes, and olives on top. Serve alongside tortilla chips for dipping.
