Easter Mini Bundt Cakes

Servings: 24 mini bundt cakes

Ingredients:

  • 1 box confetti cake mix
  • 1 stick of melted butter
  • 4 eggs
  • 1 cup of milk

For the Chocolate Decorations:

  • 1 cup of melting chips in assorted colors
  • Silicone molds in various Easter shapes
  • 1 pouch of ready-made green icing

Preheat your oven to 350°F.

Combine the cake mix, melted butter, eggs, and milk in a mixing bowl. Pour the mixture into a greased mini bundt pan and bake for 20-25 minutes. Allow them to cool before removing from the pan.

To create the chocolate decorations: In separate bowls for each color, melt the melting chips in the microwave, heating for 1-minute intervals until completely melted. Transfer the melted chips into baggies and snip off a corner. Pipe the melted chocolate into the molds and freeze for about 15-20 minutes. Once the mini bundt cakes have cooled, pipe the green icing on top to resemble “grass” and place the chocolate decorations on top.

Tip: To save time on decorations, consider using store-bought chocolate bunnies, eggs, crosses, or marshmallow bunnies instead.
