Ricotta Apple Crepes
Yield: 12 crepes (serving size: 2-3 crepes)
For the Crepes:
1 cup flour
1 tablespoon sugar
1/2 teaspoon salt
1 cup whole milk
2 eggs
1 teaspoon vanilla extract
Butter, for cooking
For the Apple Topping:
Butter
2 tablespoons brown sugar
Envy Apples, cored and diced
1/2 teaspoon ground cinnamon
1/8 teaspoon nutmeg
Salt, to taste
Maple syrup
For the Ricotta Filling:
1 cup ricotta cheese
1 lemon, zested and juiced
2-3 tablespoons sugar, adjusted to taste
To prepare the crepes: In a mixing bowl, whisk together the flour, sugar, and salt. Gradually stir in the milk, eggs, and vanilla until the batter is smooth and silky. Cover and chill.
For the apple topping: In a skillet over medium heat, melt butter with brown sugar until it becomes bubbly and caramelized. Add the diced apples, cinnamon, nutmeg, and salt to your preference, cooking on medium-low heat until the apples are tender. Finish with a drizzle of maple syrup off the heat.
To make the ricotta filling: In a bowl, mix the ricotta cheese with lemon zest, lemon juice, and sugar until well combined, then set aside.
In a nonstick skillet over medium-low heat, melt a small pat of butter. Pour in a ladleful of crepe batter, cooking until bubbles appear on the surface, then flip and cook until golden brown. Repeat this process with the remaining batter, stacking the crepes to keep them warm and pliable.
Spread a layer of the ricotta mixture on each crepe, then fold into quarters. Top with the apple mixture before serving.
