Vanilla Wafer Crust French-Style Cheesecake
Recipe from “Cookin’ Savvy”
Preparation time: 25 minutes, with an additional 3 hours for chilling
Yields: 8 servings
For the Crust:
2 cups of crushed vanilla wafers
1 stick of melted butter
1/4 cup of packed brown sugar
For the Whipped Cream:
1 cup of heavy whipping cream
3 tablespoons of granulated sugar
1 teaspoon of vanilla extract
For the Cheesecake Filling:
8 ounces of softened cream cheese
1 teaspoon of vanilla extract
1/2 cup of powdered sugar
To prepare the crust: Combine the crushed vanilla wafers, melted butter, and brown sugar. Firmly press the mixture into a pie dish or individual serving cups.
For the whipped cream: In a large bowl, use an electric mixer to whip together the heavy cream, sugar, and vanilla until it reaches a thick consistency.
To prepare the cheesecake filling: Add the softened cream cheese, vanilla extract, and powdered sugar to the bowl with the whipped cream. Blend with the electric mixer until the mixture is smooth. Pour this filling over the prepared vanilla wafer crust and refrigerate for 3 hours.
