Lasagna Rollups

Servings: 4-6 (1 rollup per serving)

8 lasagna noodles

1 pound ground beef

1 tablespoon garlic powder

1 tablespoon onion powder

15 ounces ricotta cheese

1 teaspoon rosemary (optional)

1 jar marinara sauce

2 cups mozzarella cheese, divided

In a pot, cook the lasagna noodles according to the package directions. Once cooked, drain and rinse with cold water, then set them aside.

Using the same pot, cook the ground beef until browned, then mix in the garlic powder and onion powder. Incorporate the ricotta cheese, rosemary (if using), marinara sauce, and 1 cup of mozzarella cheese.

Preheat the oven to 350 F.

Spread a layer of the meat sauce on the bottom of a baking dish. Place the cooled noodles on a cutting board or parchment paper. Spoon the meat mixture onto each noodle and roll them up tightly. Arrange the rollups seam-side down in the prepared dish. Cover with the remaining meat sauce and sprinkle the rest of the mozzarella on top.

Bake for 20 minutes.
