Ingredients:

  • 1 bag Success Pearl Couscous
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon seasoned salt
  • 4 tablespoons olive oil, separated
  • 1 can (14 ounces) chickpeas, rinsed and drained
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/2 English cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice
  • 1/2 cup feta cheese, crumbled

Prepare the pearl couscous as instructed on the package.

In a medium bowl, toss the shrimp with the seasoned salt.

In a large saucepan over medium-high heat, add 1 tablespoon of olive oil and heat. Add the shrimp, cooking for about 5 minutes. If needed, cook in batches to prevent overcrowding.

In another large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chickpeas and cook for 8 minutes until they are crispy and golden brown, stirring frequently. Mix in the garlic powder, onion powder, smoked paprika, and salt, tossing to coat the chickpeas before cooking for an additional 2 minutes.

In a large bowl, combine the prepared pearl couscous, cooked shrimp, crispy chickpeas, diced cucumber, halved cherry tomatoes, basil, red onion, dill, lemon juice, and the remaining olive oil. Toss everything together to combine. Top with crumbled feta cheese.
